Stuffed Figs

January 2014 003I’m still undecided about whether this recipe would be better as an appetizer or as dessert. Either way, it’s delicious and really simple to make. Enjoy!

1 package dried figs

1 Cup Orange juice

1/2 Cup orange marmalade

2 tsp ground cardamom

2 tsp cumin

3/4 Cup Ricotta cheese

1/4 Cup sliced almonds, toasted

Slice figs in half lengthwise and simmer in orange juice for 10 minutes until softened. Remove figs to platter and add marmalade, cardamom and cumin to the pan. Stir and simmer until thickened.

Top figs with 1 -2 tsp of ricotta cheese. Drizzle with orange juice mixture and top with almonds.

Shortbread Cookies


This recipe for shortbread cookies was handed down to me from my Grandma. They are incredibly quick and easy to make and they’re absolutely delicious. Enjoy!


2 Cups of Butter,Softened

1 Cup Icing Sugar

3 1/2   Cups Flour

1 Tsp Vanilla

Mix together until completely combined. Drop into 1″ balls on cookie sheet. Bake 8-10 minutes at 350 degrees until lightly golden on the bottom. This recipe makes 60 delicious cookies!
