We have tacos of one kind or another at our house almost every week, usually fish or black bean. They’re delicious and can be really healthy if you load them up with the right things. Plus, the kids love them because they can pick and choose their own toppings. Recently, in an effort to branch out, I tried using lentils and found that I actually prefer them. This surprised me because I’ve never been much of a fan of lentils. Needless to say, this recipe has become one of my family’s favourites. I hope you enjoy them!
1 Tbsp Extra Virgin Olive Oil (or whatever cooking oil you prefer)
1 Onion, diced
2 Garlic cloves, minced
1 Tbsp Chili powder
2 tsp Cumin
1 tsp Oregano
1 Cup dried Lentils
2 C Water
1 Lime, Juice only
8-10 taco shells, whichever type you prefer
Topping ideas:
Lettuce
Mango
Red Pepper
Cheese
Fresh chopped Cilantro
red onion
Avacado
Tomatoes
Heat oil over medium heat. Add onions and garlic and saute until beginning to soften. Stir in chili powder and cumin. Cook for an additional 1 -2 minutes. Add in Lentils, oregano and water. Stir. Simmer mixture over low heat for about 30 minutes until lentils are tender. Remove from heat and stir in the juice from the lime.
Serve in taco shells and finish with your favourite toppings.
