Chocolate Zucchini Muffins

It’s always great if you can get your kids helping in the kitchen. It’s a great way to teach them about food and help them gain a healthy attitude towards it. Muffins are one of the easiest things you can make. There’s enough measuring and stirring to keep them interested and a healthy, delicious treat to eat once they’re finished baking.

When made at home, muffins can be incredibly healthful and a perfect portable snack for when you’re in a rush. The best part, though, is the amazing smell that fills your house. I always think the smell of fresh baking makes a home feel warm and inviting. With an incredible variety of ingredients you can add to cater to your own taste, muffins are kind of amazing. I usually add fruit or vegetables to the muffins I make and I also like to add seeds. The kids aren’t allowed to have nuts at school, so seeds are a great way to add some healthy protein. If you have dairy or gluten allergies there are easy substitutions you can make, too. The list is truly endless. So grab your kids and get them to help you whip up some of these yummy muffins.

1/3 Cup Apple Sauce

1/2 Cup Sugar

1 Cup Zucchini, grated

3/4 Cup Milk

In a smaller bowl beat the egg until frothy. Add in the apple sauce, sugar, zucchini and milk. Mix well. Pour into flour mixture and stir until just combined. Fill greased muffin cups 2/3 full. Bake for 15 to 20 minutes .
